Rhubarb Recruitment is helping The Royal York & Faulkner Hotel in Sidmouth, Devon with the recruitment of a Sous Chef to run one of its restaurant outlets, the Blinis Café Bar & Bistro.
The Blinis Bistro has its own well-equipped satellite kitchen, and the Sous Chef will be responsible for running all day-to-day operations, including ordering, ensuring H&S compliance, creating the weekly specials menu, and of course, hands-on cooking. The kitchen enjoys the support of the main hotel kitchen where needed and draws on shared dry stores etc, but you will essentially be responsible for running all aspects of your own operation. This is a rare & exciting opportunity for a creative chef to single-handedly run his or her own kitchen, and to work with fresh, locally sourced modern British cuisine. A great opportunity for a creative and enthusiastic Sous Chef who is ready for his/her first venture into a Head Chef role.
The Bistro has a 48-cover dining room, serving brunch & lunch. The menu includes snacks & a set 2 or 3-course offering with changing specials.
Applicants must have experience at a Sous Chef level running fresh food, and modern kitchens, and must be comfortable working alone in his/her own kitchen.
Good quality en-suite accommodation is available at a subsidised rate including the option of a double room for a Chef + partner. (CDP & FOH roles available)
Salary £29,800 per year plus tips worth in the region of £3,500 per annum and very good quality and discounted accommodation.
